Tasting notes — Teetering between freshness and umami, this direct-to-press rendition of rosé does not reflect the typical characteristics of Pinot Noir. Instead, notes of white pepper, rosewater, and cream are most pronounced. Raw and textural, feels like eating salted watermelon on a hot summer day.
Vinification — The Pinot Noir was picked on August 25, 2022 at 20 Brix. The clusters were lightly foot treaded and sat on the skins for 2 hours to extract color before pressing into a stainless steel tank. At <5 Brix, the wine was racked into neutral French barriques and aged sur lie until being bottled unfined and unfiltered in April 2023.
