Tasting notes — Tropical fruit is balanced with green earthiness, both on the nose and palate. Miner's lettuce, young pineapple, white peach, and celery salt play with a vibrant mouthfeel.
Vinification — The Sauvignon Blanc was picked on August 25, 2022 at 21.5 Brix. The fruit was pressed into a stainless steel tank to begin native fermentation. Once the wine was dry, it was racked into neutral French barriques with 40ppm sulfur to prohibit malolactic fermentation. It was racked once again before being bottled unfined and unfiltered in April 2023.
